Welp, officially done with my second week in the working world and I am wiped. I have no idea how people do this and raise children at the same time. How my parents ever put up with my in my bratty phases while working full-time, I’ll never know. I would’ve shipped 10-year-old me off to boarding school in a heart beat.
BUT luckily my new highly regimented schedule and lack of mid-week bar hopping does allow for stellar workouts and ample opportunity to try out new recipes, so tonight i did both!
Today was week 1 of 1/2 marathon training, and I was pleasantly surprised I don’t have as much work to do as I thought. Charlottesville is EXTREMELY hilly, and running there for the past four years makes the flatness of NOVA a piece of cake. Well, kinda. 11 miles and 1 hour 33 minutes later, I’m pretty tired.
But running long distances does tend to kill one’s appetite for a bit (before it comes back with the force of a ravenous beast, that is) so I tried cooking something totally new, courtesy of Jenna at http://www.eatliverun.com. Enter Vegan Lentil Walnut Meatloaf!

This was fabulous! The glaze really made it. I used pre-cooked lentils (Trader Joe’s doesn’t sell them dry? Cramping my style, TJ’s) but it worked perfectly. Whether you’re vegan/vegetarian/pescatarian/omnivore/eat steak every day of your life, try this! No animal products, not super time consuming, delicious and healthy. My taste buds, tummy and the Earth were all happy with this one.
